This scrumptious hash brown breakfast casserole is easy to prepare and oh so worth it! Serve with biscuits, toast and fruit.

Ingredients
1/2 teaspoon pepper
1 cup shredded reduced-fat cheddar cheese
4 cups freshly grate potatoes
5 eggs Preheat oven to 350°. In a large bowl, combine hash browns, eggs, chicken, and pepper. Transfer to a greased 8-in. square baking dish; sprinkle with cheese.
Bake, uncovered, until a knife inserted in the center comes out clean, 40-45 minutes. Allow to stand for 5 minutes before serving.
